Protein-Packed Spinach Salad Recipe
BABES. This salad is one of my faves all year round. It is a fave for lunches, dinners, brunches, bringing to a gathering, anything and everything!
This baby is SO filling and absolutely packed with protein! Definitely a complete meal in one bowl so right up my alley — easy, simple and delicious.
Protein-Packed Spinach Salad
3 cups fresh spinach
½ cup cottage cheese
½ cup cooked quinoa
4 oz (approx. 120g) grilled chicken, sliced
½ avocado, sliced
¾ cup cherry tomatoes, halved
¼ cup mushrooms, sliced
⅛ cup red onion, sliced
Vinaigrette dressing of your choice
- Simply toss all of the salad ingredients together in a big bowl and drizzle with the dressing of your choice!
- Serve and enjoy.
I often use a balsamic vinaigrette dressing with this salad, but a red wine vinaigrette dressing also works really well with these ingredients.
One of the best things about this recipe is you can easily alter it to suit your personal preferences as well. If you don’t like cottage cheese, you can definitely swap it for tofu, or even hard-boiled eggs. You can leave the chicken out if you prefer a vegetarian option. I also love to swap the tomatoes for red grapes — try it, it’s really awesome!
