Fresh Summer Salad
It’s finally SUMMERTIME here and with the warm weather comes all the fresh summer foods! Today I am sharing with you one of my FAVORITE summer salad recipes. This flavor combo may seem a little unconventional, but once I tried it, I was hooked!
1 cup arugula
1 cup fresh baby spinach
8 cherry tomatoes, halved
1 cup watermelon, cubed
¼ cup crumbled feta
4 basil leaves
Balsamic vinaigrette dressing
Wash the spinach, arugula and basil and set aside to dry. Cut the cherry tomatoes into halves and cube your watermelon. Toss all ingredients together in a bowl and drizzle lightly with balsamic vinaigrette. Enjoy!
To make a complete meal out of this salad, just toss in grilled chicken or shrimp, or add quinoa for a vegetarian option!
